Burn Baby Burn Thai Food Inferno!

Thai food is my favorite!  I find that there is such a wide variety of spices and aromas, that adds a great twist to add to any of your classic dishes. Salad is the easiest choice to play around with and its still healthy.

Most people complain about integrating salads into the daily meal plan. Sometimes salads don't fill you up and you still feel empty or have real hanger. You can add tasty ingredients that are not only filling but amazing for that bod. Add some spices and your world is upside down.

INGREDIENTS: 

Sweet Lime-Cilantro Dressing:

  • 1 cup olive oil
  • 1/2 cup finely chopped fresh cilantro
  • 1/4 cup sugar
  • 1 clove of garlic, minced
  • Juice of 1 full lime
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 avocado, peeled and sliced

Thai Salad:

  • 4 cups kale or romaine, chopped
  • 1/2 head of red cabbage, finely chopped
  • 5 ounces edamame, cooked
  • 1 large carrot, grated
  • 1 green onion, chopped
  • 2 ounces dried cranberries
  • 1 red or yellow bell pepper, sliced
  • 1/4 cup peanuts, or pine nut 

Directions:

1. For the Thai salad: In a medium to large sized bowl, toss the all the salad fixings. Don't forget to rinse your lettuce! Always have a fresh start with your greens. I love to chop up my greens a little bit smaller so that the salad is easy to eat from the start!

 

2. For the sweet lime-cilantro dressing: Put the oil, cilantro, sugar, garlic, lime juice, salt and pepper in a large blender and blend until smooth. Blend up your ingredients to make sure your dressing is easy to drizzle over the salad. This step is important and make all the difference with giving you the desired taste you want!

*Cilantro is one the best ingredients to easily add a lot of flavor to your salad! 

3. Drizzle 3 tablespoons of the sweet lime-cilantro dressing with a sprinkle of toasted sesame seeds for a garnish for the most beautiful and powerful salad you will ever taste.
